Cousins Heritage Inn was a restaurant in Dexter in an 1850s farmhouse run by Paul Cousins; it is no longer open. Terry B's has taken its place.

Although many restaurants use the local bounty, some chefs are especially connected to the land and its yield. Gregory Upshur, chef at Cousins Heritage Inn in Dexter, Mich., once asked some boys to kill rattlesnakes that had been seen near the restaurant. I skinned them and browned them with shallots, he said. People were delighted to try them.
